Add the butter to a pan over medium high heat and allow it to melt down. Add in 1 tbsp of oil. Place the onions in followed by the brown sugar and a bit of salt. Stir and saute on medium high for about 5 minutes and then reduce the heat to low. Allow the onions to caramalize for 15 to 20 minutes stirring occasionally. Set aside in a bowl.Â

Lay the pork chops onto a cutting board or plate. Season them with salt, pepper, garlic powder, Southern seasoning, Italian seasoning, and paprika. Rub in and season the other side. Add another tbsp of oil into the same pan as the onions were fried in. Place the chops in and fry, over medum high heat, for about 2 minutes on each side to sear them. Set them aside on a plate.Â

Next, add the remaining oil to a large casserole dish. Lay the potatoes evenly over the bottom. Follow this by the caramalized onions and half the cheese.Â

Make the sauce by combining the cream of mushroom soup with the milk, sour cream, chicken broth, thyme, onion powder, and remaining 1/2 tsp of garlic powder. Stir until well combined. Â

Spoon the sauce over the cheese in the casserole dish. Lay the chops over the top and spread the remaining cheese over the pork chops. Place some aluminum foil over the casserole dish and place in a 375 degree F preheated oven for 40 minutes.Â
