Imagine Stuffed Chicken Thighs Wrapped in Bacon

Life doesn't get much better than when you take a chicken thigh, season it, place some stuffing in, wrap it in bacon, and place it in the oven. The outcome is simply beyond words. The procedure is so simple and the taste is divine. The great thing is all you need are some boneless, skinless chicken thighs, basic seasoning, a box of stuffing, and some bacon. Of course, a little bit of time and love helps too.

A little trick I always do is make them up the night before, cover them, and put them in the fridge. After you come home from work the next day, simply slip them into the oven, and in 45 minutes dinner is on the table.

They are great severed up with some mashed, fries, and a garden salad. My friends, this is a meal that you family and friends will go mad over.

Oh my, another Wednesday and not knowing what to cook. Have we got an idea for you: "Stuffed Chicken Thighs Wrapped in Bacon." The procedure is so simple and the taste is divine for these delightful thighs. As one member said: "Nobody could resist these."

Ingredients
  • 8 medium boneless skinless chicken thighs, butterflied
  • 1 medium box of Stovetop stuffing, cooked and fluffed
  • 8 slices of bacon
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon Italian seasoning
  • 4 medium sprigs of fresh thyme (1 tsp of dried)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
Instructions
  1. Lay the chicken out on a plate. Season the thighs on both sides with salt, pepper, Italian seasoning, and thyme.

  2. Prepare the stuffing according to directions.

  3. Lay 2 or 3 tbsp of stuffing into the middle of each thigh and roll it up. You want it fairly tight. 

  4. Starting at one edge, wrap bacon around each thigh. Again, a bit tight and flare it out so it covers the entire thigh. 

  5. Spray or butter the bottom of a baking dish and place any remaining stuffing in. Put the wrapped thighs over top.

  6. Season the top of the chicken with the garlic powder and paprika. 

  7. Place the thighs into a 425 degree F or 215 C preheated oven for about 45 minutes or until cooked through. 

  8. Serve and enjoy.

Note

I always use pre-butterflied thighs, but you can butterfly them yourself. 

Use a good bacon. A smoked maple bacon makes an excellent choice.
