If you love those famous chicken bowls, this homemade baked version is right up your alley. It has all the comfort food goodness you’d expect — creamy mashed potatoes, sweet corn, rich gravy, melted cheese, and crispy golden chicken all baked together into one hearty, satisfying supper.

This is one of those easy family-style meals that comes together with simple ingredients and delivers big on flavour, texture, and comfort.

KFC Chicken Bowl Bake is a simple comfort food casserole made with crispy chicken, mashed potatoes, corn, rich gravy, and melted cheese — all baked into one hearty and satisfying supper.

  1. Boil the potatoes in water until fork tender. This should take about 15 minutes

  2. Cook the chicken strips in an air fryer or oven according to package directions until very crispy and golden.

  3. While the chicken is cooking and the potatoes are boiling, make the gravy. Melt the butter in a saucepan over medium heat. Whisk in the flour and cook for about 1 minute. Slowly add the chicken broth while whisking.

  4. Add the onion powder, garlic powder, black pepper, poultry seasoning, and Bovril. Simmer until thick, glossy, and rich.

  5. Drain the potatoes. In the same pot, mash them with the butter, milk, salt, pepper, onion powder, and garlic powder until smooth and fairly creamy.

  6. Preheat your oven to 375°F (190°C) and lightly grease a casserole dish.

  7. Spread the mashed potatoes evenly into the bottom of the dish. Layer the corn over top.

  8. Add a layer of crispy chicken pieces, then spoon some gravy over the mixture.

  9. Sprinkle with the shredded cheddar cheese on top.

  10. Bake for 20–25 minutes, until hot and bubbly. Broil for 1–2 minutes, if desired, for a lightly browned top.

  11. Before serving, spoon a little extra hot gravy over the top and add the reserved crispy chicken pieces for extra texture.

Note

Cook the chicken a little longer than directed if you want it extra crispy after baking.

Keep the mashed potatoes fairly thick so the casserole holds its shape and doesn’t get too soft.

If you want the best texture, reserve a few crispy chicken pieces to add on top just before serving.

A little extra hot gravy spooned over the top at the end gives the dish a richer finish and helps with presentation.

You can use canned or frozen corn for this recipe.

Old cheddar works especially well for extra flavour, but regular cheddar will work too.
