Ingredients
Instructions
-
Add some oil to a pan over medium high heat. Place the beef in, break it up, and fry until browned and cooked through. Drain any excess oil if necessary. Move the beef to one side and add in the onion and garlic. Stir and statue until fragrant. Mix together. Level out the beef and add the potatoes evenly over the top. Spread the grated carrots over the potatoes followed by the bell peppers, corn, beef broth, and tomatoes. Make sure everything is evenly spread out.
-
Season with Worcestershire sauce, salt, pepper, Italian seasoning, and hot pepper flakes. Again, make sure they are even distributed. Place a lid on, lower the heat to medium low, and allow to cook for 20 to 25 minutes until the potatoes are cooked. As it simmers, keep an eye on it. If it appears to watery, remove the lid for a bit.
-
Remove the lid, add the cheese evenly over the top, place the lid back on, and allow to simmer until the cheese melts. Garnish with parsley and serve. Enjoy your Landslide Skillet!

Note
- Customize Your Veggies: Feel free to swap in your favorite vegetables! Zucchini, mushrooms, or even spinach work wonderfully in this dish. Use what you have on hand for added convenience.
- Cheese Lovers Unite: For an extra touch of indulgence, sprinkle other shredded cheeses over the top during the last few minutes of cooking. Mozzarella or even a smoky gouda would melt beautifully.
- Make It Your Own: Experiment with different seasonings to suit your taste. Try taco seasoning for a Mexican-inspired twist or add Italian herbs for a Mediterranean flair.
- Meal Prep Friendly: This skillet reheats beautifully, making it perfect for meal prep. Store leftovers in an airtight container in the fridge for up to 3 days.
- Dietary Adjustments: If you're watching carbs, consider replacing the potatoes with cauliflower florets or turnips for a lower-carb option.
- Pro Tip: Slice the potatoes as evenly as possible to ensure they cook through at the same time. A mandoline slicer can make this task quick and easy!
- Serve It Up: Pair this dish with a side salad, crusty bread, or even a dollop of sour cream for added freshness and flavor.
Enjoy this versatile and comforting meal your way! 😊
