  1. Add the oil to a pan over medium high heat. Place the sausage in and fry until cooked through. Add in the pepperoni and fry for a couple of minutes. Move everything to one side of the pan and add in the mushrooms. Stir and fry until they change color. Move to one side of the pan once again. Add in the onion and garlic. Stir and saute until fragrant. Add the rice in and cook for a few minutes. Stir until everything is well combined.Β 

  2. Pour in the tomatoes and beef broth. Mix until well incorporated. Season with the salt, pepper, and Italian seasoning. Stir once again and bring to a boil. Gently add the beans over the top. They are fragile so be careful not crush them. I usually carefully pat them down.Β  Place the bell peppers over the beans, put a lid on, and allow to simmer for about 20 minutes until the rice cooks.Β 

  3. After 20 minutes, remove the lid and spread the mozzarella and Parmesan over the top. Place the lid back on and allow to simmer until the cheese melts down. Garnish with basil, plate, and serve.Β
