Finished with melted Tex-Mex cheese and creamy sour cream on top, this dish is warm, filling, and full of flavour. It’s a practical, budget-friendly recipe that comes together in about 30 minutes and works just as well for weeknight meals as it does for relaxed weekend cooking.

Add the ground beef to a pan over medium high heat. Break it up, stir, and fry until cooked through and no longer pink. Push to one side of the pan and add in the onion and garlic. Stir and sauté until fragrant. Mix until well combined.

Add in the taco seasoning, salt, and pepper. Mix and fry until the seasoning blooms or activates. Add in the hash browns and mix once again. Now, place the tomato paste and salsa in. Stir once again. Add a bit of water if it looks too dry. Allow to cook over low heat for a few minutes. Add in the black beans and stir.

Turn off the heat and sprinkle the cheese over the top. Place a lid on and let the cheese melt down. Add a few dollops of sour cream over and garnish with cilantro.

Note
Use a chunky salsa for best texture. Thin or watery salsa can make the skillet too soft.
Let the skillet cook uncovered for a few minutes at the end to help it firm up and get a bit of browning.
If the mixture looks dry while cooking, add 1–2 tablespoons of water as needed.
Tex-Mex cheese melts best, but a mix of Tex-Mex and sharp cheddar also works well.
Add the sour cream after cooking so it stays creamy and doesn’t thin the skillet.
Leftovers reheat well in a skillet or microwave.
