Note
- Potato Tips:
Dice your potatoes small and evenly for quicker cooking and better texture. Yukon Golds or Russets work best. If you want them extra flavorful, give them a quick fry in the pan before mixing everything together (like in the video). - Pasta Choice:
Elbow macaroni is traditional and cooks quickly, but rotini or small shells work just as well. Add uncooked and simmer in the sauce, adding more liquid if needed. - Don’t Worry About “Both” Potatoes and Pasta:
This dish is all about stretching what you have. Using both adds texture and heartiness — and hey, those carbs would’ve powered long days in the woods! - Add-Ins & Variations:
Toss in some chopped spinach, frozen peas, or green beans if you have them. A pinch of chili flakes or a dash of hot sauce adds kick. - Cheese Options:
Cheddar melts beautifully, but you can swap in mozzarella, Monterey Jack, or a blend for a different twist. - Make-Ahead Friendly:
This dish reheats well and even tastes better the next day as the flavors settle in. Great for meal prep or next-day lunches. - Freezer Tip:
Let cool completely before freezing in an airtight container. It’ll keep for up to 2 months. Reheat gently with a splash of broth or water.
