  1. Season the chicken with salt and pepper. Add the butter and oil to a pan over medium high heat. Allow it to melt down. Place the chicken in and allow it to cook until it's no longer pick. It doesn't have to be completely cooked as it's going to cook more in the rice. Remove and set it aside. 

  2. In the same pan, add in the onion, garlic, sundried tomatoes, Italian seasoning, and paprika. Stir and sauté for 2 or 3 minutes until the onion and garlic are fragrant. Add in the cherry tomatoes. Stir and fry until they begin to wilt a little. Put the rice in and stir once again until coated with the seasonings and mixed well. 

  3. Pour in the beef broth and table cream. Nestle the chicken back in. Cover and allow to simmer, over medium low heat,  for 12 to 15 minutes until the rice is cooked. Remove the cover and put the spinach in. Stir and let it wilt down. Add the parmesan. Stir, cover, and allow to simmer or an additional 4 to 5 minutes. 

  4. Serve and enjoy your Lost in Tuscany Chicken!
