This Lost Treasure Skillet is a cozy one-pan dinner made with ground beef, hash browns, diced tomatoes, corn, and melted cheddar cheese. It’s quick, filling, and loaded with flavor—perfect for busy weeknights when you want something hearty and comforting without a sink full of dishes.

Add some oil to a pan over medium high heat. Place the hash browns in and fry until cooked through and browned. Set aside in a bowl.

Add the beef to a pan over medium high heat. Place the ground beef in. Break up, stir, and fry until no longer pink. Push the beef to one side. Add in the onion, garlic, and bell pepper. Stir and sauté until fragrant and the bell pepper begins to soften. Stir until well combined.

Season with salt, pepper, paprika, Italian seasoning, and Worcestershire sauce. Mix until combined. Add in the crushed tomatoes, broth, and corn. Stir once again. Now add in the hash browns and gently mix. Reduce the heat and allow to simmer for 4 to 5 minutes.

Spread the cheese over the top, turn the heat off, place a lid on, and allow the cheese to melt down.

Best hash browns to use: Frozen diced or Southern-style hash browns work best. Shredded hash browns also work, but the texture will be a bit softer.
Keep it thick: Start with ¾ cup broth and add a splash more only if needed. If the skillet looks too soupy, simmer uncovered for 2–3 minutes at the end.
Cheese tip: For the best melt, cover the pan for 2 minutes after sprinkling the cheese on top. You can also broil for 2–3 minutes for a lightly browned top.
Make it your own: Add ½ cup peas, diced bell pepper, or jalapeños for extra color and flavor (don’t overdo it).
