Meatball Soup – Ultimate Comfort Food

It was a cool autumn's day and I had a hankering for some soup. I didn't want anything traditional such as chicken noodle though. Then I though of something unique. Being a fan of spaghetti and meat balls, meatball soup came to mind. What more would warm the bones and sooth the soul. I thought this has to be the ultimate comfort food. I gave it a try and the universe came to life.

Meatball soup is a unique combination of spices, pasta, meatballs, veggies, and broth. It is so simple and easy to make and brings the soul to life. Give it a try and let us know how it comes out.

  • 1 pound lean ground beef
  • 1 large egg
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon minced garlic
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons olive oil
  • 1 small chopped carrot
  • 1 small chopped onion
  • 2 stocks of celery, chopped
  • 3 cups beef broth
  • 750 grams diced tomatoes (1 can)
  • 1 cup macaroni pasta
    To Make the Meatballs
  1. Add the ground beef to a bowl followed by the egg, Italian seasoning, salt, pepper, minced garlic, and Worcestershire sauce. Mix until well combined.

  2. Using an ice cream scoop or spoon, scoop up about a golf ball size of the mixture. Place it in the palm of you hand and from it into a ball. Set them aside on a baking tray lined with parchment paper. 

  3. Bake at 350 degrees F or 180 C for about 20 minutes. 

  4. To Make the Soup
  5. Add the olive oil to a pot over medium high heat. Add in the carrots, onions, and celery. Stir and saute for a few minutes until the onions become fragrant and translucent. 

  6. Pour in the beef stock and diced tomatoes. Salt and pepper to taste. Stir and bring to a boil. 

  7. After a boil, add the meatballs back in followed by the pasta. Stir, cover, and simmer until the pasta is tender. This will take about 10 to 12 minutes. 

  8. Ladle into a bowl. Serve and enjoy your meatball soup.
