Add the ground beef to a bowl followed by the egg, Italian seasoning, salt, pepper, minced garlic, and Worcestershire sauce. Mix until well combined.
Using an ice cream scoop or spoon, scoop up about a golf ball size of the mixture. Place it in the palm of you hand and from it into a ball. Set them aside on a baking tray lined with parchment paper.
Bake at 350 degrees F or 180 C for about 20 minutes.
Add the olive oil to a pot over medium high heat. Add in the carrots, onions, and celery. Stir and saute for a few minutes until the onions become fragrant and translucent.
Pour in the beef stock and diced tomatoes. Salt and pepper to taste. Stir and bring to a boil.
After a boil, add the meatballs back in followed by the pasta. Stir, cover, and simmer until the pasta is tender. This will take about 10 to 12 minutes.
Ladle into a bowl. Serve and enjoy your meatball soup.
