Ingredients
Instructions
-
Place the garlic bread loaf on a baking tray and bake at 375°F (190°C) for 8–10 minutes, just until the edges begin to crisp and the inside firms up slightly.
Remove from the oven and let it cool for a few minutes.
-
Cut the garlic bread into thick slices, then tear each slice into large rustic chunks. Set aside.
-
In a large cast iron skillet over medium heat, add the ground beef and cook until browned, breaking it up as it cooks.
Add the diced onion and cook for 3–4 minutes until softened.
-
Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
Add:
- Worcestershire sauce
- Italian seasoning
- smoked paprika
- salt and pepper
Stir well to combine.
-
Pour in the marinara sauce and stir everything together.
Let it simmer for 2–3 minutes, just until slightly thickened.
The mixture should be meaty and moist, not overly saucy. -
Turn off the heat and stir in:
- about 1 cup of mozzarella
- all of the cheddar cheese
Mix until slightly melted and combined.
-
Scatter the garlic bread chunks over the skillet.
Gently press some of the pieces slightly into the beef mixture, leaving others on top.
Do not fully mix—this helps create crispy edges and soft centers. -
Sprinkle the remaining mozzarella and the parmesan evenly over the top.
-
Place the skillet in the oven and bake at 375°F (190°C) for 15–20 minutes, until hot and bubbly.
-
Remove from the oven and let it sit for 5 minutes before serving.
Garnish with parsley if desired, then scoop and serve.

Note
- Pre-baking the garlic bread is important. This helps remove excess moisture so the bake doesn’t turn soggy. You want it lightly crisp on the outside but still soft inside.
- Keep the bread pieces large. Slice first, then tear into chunky pieces. This gives you better texture with crispy edges and soft centers.
- Don’t overmix the bread into the beef. Gently nestle it in instead. This keeps the structure and creates a nice balance of crispy and soft bites.
- Use a good-quality marinara sauce. Since it adds most of the flavor, a richer sauce will make a noticeable difference.
- Freshly shredded mozzarella melts better. Pre-shredded cheese can work, but shredding your own will give you a smoother melt and better texture.
- Broil at the end for best results. A couple of minutes under the broiler helps crisp the top and adds a bit of color.
- Let it rest before serving. About 5 minutes helps everything set and makes it easier to scoop.
