Description

This flavorful and easy-to-make Mexican chicken bake is the perfect comfort food for a busy weeknight. Packed with tender chicken, savory beans, and melted cheese, it's a satisfying and delicious meal that's sure to please everyone.

Ingredients
  • 1 Cup of Medium salsa
  • 1 Tbsp of oil for frying
  • 2 Tsp of ground black pepper
  • 1 Tsp salt
  • 1 Medium can black beans
  • 1 Tsp cumin
  • 1 Tsp garlic powder
  • 1 Tsp onion powder
  • 1 Heaping tsp chili powder
  • 1 Cup of sour cream
  • 1/2 Bag of tortilla chips
  • 2 cups of grated cheddar cheese (I use 1 cup of old and 1 cup of extra old.)
  • 2 Large chicken breasts, cut in half
  • 1 Chopped jalapeno
Instructions
  1. Season the chicken on both sides with salt, pepper, onion powder, and garlic powder. Add the oil to a pan over medium high heat. Place the chicken in and fry it on both sides until cooked through. Set is aside on a plate to rest. 

    The seasoning on the breasts is independent of that in the ingredients. In other words, you will need a bit extra for seasoning.
  2. To make the salsa sauce, add the black beans to a mixing bowl followed by the sour cream, salsa, cheese, jalapeno, cumin, garlic, onion powder, and chili powder. Slice the chicken into cubes and add it in. Mix until well combined and set aside. 

     

    You can use left over or store bought chicken as well.
  3. Break up some tortilla chips and place them into the bottom of an oven proof pan. You can also use a casserole dish if you want. Follow this by spreading a layer of the salsa/chicken mixture over the top. Then, another layer of chips and a final layer of salsa mix. Spread the cheese over the top. Place in a 350 degree F or 180 C preheated oven for about 25 minutes. 

  4. Remove from the oven, garnish with parsley, and serve. Enjoy your Midweek Mexican Chicken Bake!

Note
