It's fall and time for soup. The great thing about any soup is that it's so easy to make. I mean, you can use just about anything you have on hand. Season it right, and it's out of this world delicious. That's certainly the case with our Mother Hubbard's Soup.

Add some oil to a Dutch oven or large pot over medium high heat. Put the beef in, break it up, and allow it to cook until browned.

Add in the onion, garlic, and celery. Stir and staute until the garlic is fragrant.

Season with salt, pepper, Italian seasoning, and rosemary. Stir and cook for about 2 minutes until the seasoning activates.

Put in the tomatoes, beef broth, mixed vegetables, rice, and bay leaves. Stir and bring to a boil.Β

Place a lid on and allow to simmer for about 20 minutes until the rice is cooked and tender.

Ladle into a bowl, serve, and enjoy.
