The great thing about soup is that's it's so versatile. It's simply a matter of grabbing up what you have in your fridge, some both, seasoning and go to work. The end result is a hearty and delicious soup. That's exactly what our one pot Mother Hubbard's Soup is. It's making something delicious from virtually very little. In essence, this soup is actually a simple hamburg and vegetable soup, but Mother Hubbard's soup sounds more suiting.

Description

It's fall and time for soup. The great thing about any soup is that it's so easy to make. I mean, you can use just about anything you have on hand. Season it right, and it's out of this world delicious. That's certainly the case with our Mother Hubbard's Soup.

Ingredients
  • 1 pound lean ground beef (You can use the cut of your choice.)
  • 3 cloves chopped garlic
  • 1 small chopped onion
  • 2 medium stalks of chopped celery
  • 1 teaspoon salt
  • 2 teaspoons ground black pepper
  • 2 teaspoons Italian seasoining
  • 1 teaspoon dried rosemary
  • 1 can diced tomatoes (400 ml or 14 oz)
  • 4 cups beef broth
  • 2 medium bay leaves
  • 2 cups frozfrozen mixed vegetables (Use fresh if you wish.)
  • 1/2 cup uncooked rice (I use 7 grains, but use the rice of your choice.)
Instructions
  1. Add some oil to a Dutch oven or large pot over medium high heat. Put the beef in, break it up, and allow it to cook until browned.

  2. Add in the onion, garlic, and celery. Stir and staute until the garlic is fragrant.

  3. Season with salt, pepper, Italian seasoning, and rosemary. Stir and cook for about 2 minutes until the seasoning activates.

  4. Put in the tomatoes, beef broth, mixed vegetables, rice, and bay leaves. Stir and bring to a boil. 

  5. Place a lid on and allow to simmer for about 20 minutes until the rice is cooked and tender.

  6. Ladle into a bowl, serve, and enjoy.
