Add the butter, granulated sugar, vanilla extract, and salt to the bowl of a mixer. Mix over low speed until creamed.
Add in the flour and pecans. Mix once again until a sandy mixture forms.
Using an ice cream scoop or spoon, scoop up some of the mixture and place it in the palm of your hand. Form it into a 1 inch ball. Set aside on a baking tray lined with parchment paper.
Place the balls into a 350 degree F or 180 C preheated oven for 13 to 15 minutes.
Remove the balls from the oven and allow them to cool just to the point where you can handle them.
Roll the balls in the powdered sugar so they are completely covered. Set them aside on the baking sheet again and allow them to cool completely. The sugar should form into a bit of a glaze.
Once cooled, use a sifter to dust more powdered sugar over the balls so they are completely covered.
Serve and enjoy your snowball cookies!
Spread the pecans onto a baking tray lined with parchment paper. Place in a 350 F or 180 C preheated oven for 7 or 8 minutes. Allow them to cool and finely chop.
