No Bake 20 Minute Meatloaf

In my humble opinion, there is nothing better than a nice meatloaf. It is soul food, not to mention a hearty comfort food. When I was young, my mom always had a weekly menu. I remember being excited because every Thursday night was meatloaf night. I would rush home from school and drool over the smell of her baking meatloaf. That was the problem as I grew older and life got busier. It was always such a painstaking effort waiting for that yummy meatloaf to bake. Then I heard about the no bake microwave meatloaf and have never looked back. After perfecting the recipe, finally, I could have that ever so delicious meatloaf in 20 minutes flat. Oh, I forgot to mention that if you have some left over, meatloaf sandwiches are wonderful.

Ingredients
  • 1 pound lean ground beef
  • 2 tablespoons French onion soup mixture (powder)
  • 4 tablespoons Ketchup, 2 divided
  • 2 teaspoons brown sugar
  • 1 tablespoon prepared mustard (Again cut back if you wish or leave it out.You can cut back if you are diet conscious.)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/3 cup Italian bread crumbs (Use Panko or other brand if you like.)
  • 1 large egg
  • 1 tablespoon barbecue sauce (Use the sauce of your choice.)
Instructions
  1. Add the ground beef to a mixing bowl followed by the other ingredients. Mix until well combined.

  2. Place the mixture into an appropriate size loaf pan and place into the microwave for 12 minutes. 

    This was tested at 1000 watts. If your microwave is over adjust accordingly. As a rule of thumb, add or subtract 1 minute for each 100 watts over or under.
  3. To make the glaze, add the extra 2 tbsp of ketchup to a bowl followed by another tbsp of barbecue sauce and 1/8 tsp of garlic powder. Mix until combined. 

  4. Remove the loaf from the microwave, spoon or brush the glaze over, and return it to the microwave for an additional two minutes. 

  5. Serve and enjoy your amazing 20 minute meatloaf!
