Description

Ingredients
  • 2 large potatoes, sliced and cubed
  • 1 pound lean ground beef
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 3 tablespoons unsalted butter for the mashed
  • 1 tablespoon milk for the mashed
  • 1/2 teaspoon salt for the mashed
  • 1 teaspoon butter for the mashed
  • 1/2 teaspoon garlic powder for the mashed
  • 1 teaspoon freshly chopped basil for the mashed
  • 1/2 cup tomato sauce to go over the mashed
  • 1 teaspoon Italian seasoning to go over the tomato sauce
  • 1/2 teaspoon hot pepper flakes to go over the tomato sauce
  • 1 1/2 cup mozzarella cheese for topping
  • 2 teaspoons fresh basil for topping
Instructions
  1. Add the potatoes to a pot of water and boil for about 15 minutes until fork tender. 

  2. While the potatoes are boiling, add the ground beef to a bowl, followed by the salt, pepper, garlic, onion powder, Italian seasoning, flavor explosion, ketchup, and Worcestershire sauce. Mix until well combined. Set aside.

  3. Drain the potatoes and add in the butter, milk, salt, pepper, garlic, and basil. Mash until smooth and creamy. 

  4. Add the potato mixture to a 9 by 13 casserole dish and smooth out evenly. Pour the tomato sauce over the top, followed by the Italian seasoning and pepper flakes. Set aside. 

  5. Scoop up a handful of the mixture (also you can use the method described in the video) and form it into a meatball. Place the meatballs over the tomato sauce in the casserole dish. 

  6. Place in a 350 degree F or 180 C preheated oven for 25 minutes or until the meatballs are cooked. 

  7. Remove the casserole from the oven and spread the cheese and basil over the top. Place back in the oven for an additional !0 minutes or until the cheese is melted.

  8. Serve and enjoy your no regret meatball over mashed casserole.

  1. Use a combination of ground beef and pork for the meatballs to add more flavor and texture.

  2. For a healthier option, try using cauliflower mash instead of potatoes. Simply steam or boil cauliflower florets until soft, then mash them with some butter, milk, and seasonings.

  3. Feel free to add some extra veggies to the casserole for more color and nutrition. Chopped carrots, peas, or green beans are great options.

  4. To make the dish even more flavorful, top the casserole with grated Parmesan cheese or breadcrumbs before baking.

  5. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 1 month. Reheat in the microwave or oven before serving.
