In a small bowl, combine the flour, salt, black pepper, garlic powder, onion powder, and smoked paprika. Lightly dust both sides of the chicken thighs with the seasoned flour, gently pressing it onto the surface.

Heat 1 tablespoon of butter in a large cast iron skillet over medium heat. Add the chicken thighs and brown for 3 to 4 minutes per side until golden. The chicken does not need to be completely cooked through. Remove from the skillet and set aside to rest.

Add the sliced onions to the same pan. Cook, stirring occasionally, for 8 to 10 minutes, or until the onions are softened and lightly golden.

Push the onions to one side of the pan and add in the butter. Allow it to melt down and add the flour. Stir until a roux forms. Gradually whisk in the chicken stock until smooth. Add the thyme, black pepper, Worcestershire sauce, and poultry seasoning. Stir until the gravy begins to thicken.
