Olive garlic chicken pasta is another one of our 30 minute delicious and simple recipes. It's as easy as grabbing up some olives, pasta, a bit of seasoning, garlic, and chicken. Put them together and you have another one of our 30 minute midweek meals. It's usually one of my Wednesday throw togethers. Serve it up with a garden salad and garlic bread and you have a restaurant style meal at home.

Description

As I've said a hundred times, I love simple and easy 30 minute meals. I often call them the lazy person's midweek dinner. This olive garlic chicken pasta certainly meet this expectation. The great thing is, it comes out restaurant style.

Ingredients
  • 2 large boneless skinless chicken breast cut in half
  • spaghetti
  • 1 teaspoon salt, divided
  • 2 teaspoons ground black pepper, divided
  • 1 teaspoon hot pepper flakes divided
  • 8 cloves garlic, chopped
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil for cooking
  • 1/2 small chopped onion
  • 1 1/2 cup mixed olives, sliced
  • 2 tablespoons chopped parsley for garnish
  • 2 tablespoons Parmesan
Instructions
  1. Season the chicken with half the salt, pepper, chilli flakes, and Italian seasoning on both sides.

  2. Place the chicken in a pan over medium high heat and fry on both sides until cooked through and browned. Set aside on a plate. 

  3. In the same pan add in the onion, garlic, remaining pepper flakes, salt, and pepper. Saute over medium heat until the onions are translucent and the garlic is fragrant. 

  4. Add the olives in and saute for two or three minutes.

  5. Place the pasta in along with about half a cup of the pasta water. You can add more or less depending on how watery you want it. Toss until well combined. 

  6. Plate, slice the chicken and place it on the side, and sprinkle some Parmesan over the top along with some olive oil. Garnish with parsley. Serve and enjoy.

Note

As always, you can adjust the seasoning according to your liking. 

I use chicken breast, but you can use thighs as well.
