Add some oil to a pan over medium high heat. Place the ground beef in and fry until cooked through. Drain off any excess oil. Move the beef to one side of the pan and add in the onion and garlic. Saute until fragrant. Add in the bell peppers. Stir and fry until they just begin to soften. Season with salt, pepper, Italian seasoning, and Worcestershire sauce. Mix until the contents are well combined.
Now pour in the diced tomatoes and beef broth. Mix until well combined. Add in the rice and stir once again. Place a lid on, reduce heat to medium low, and simmer for about 20 minutes until the rice is cooked. Stir about halfway through.
Add in half the cheeses and mix until well combined. Add the other half of the cheeses over the top. Place a lid on, reduce the heat to low, place the lid back on, and allow to cook until the cheese melts. This should only take two or three minutes.
Plate, garnish the parsley. Serve and enjoy your One-Pan Unstuffed Bell Pepper Casserole!
