Pecan Butter Honey Chicken Thighs – Just What the Doctor Ordered

I love just about any chicken recipe. Of course, my favourite cut is thighs, as they are juicy and full of flavour. This dish is made with boneless skinless thighs which makes them even healthier - just what the doctor ordered. Not to mention that the recipe is incredibly easy and involves a few simple ingredients. The news gets even better: The entire dish can be made up in less than 30 minutes. In light of that, it's the perfect midweek meal.

The sauce. Oh, the sauce. It's a sweet nutty combination that's perfect over mashed or rice. To sum things up, it a recipe that falls under the "must try" category. Believe me, it will be an instant hit.

I seem to repeat myself in just about all recipes. I'm always looking for a fast and delicious midweek meal. The more you make, they harder they become to develop. Once again, we managed to find one here at Cook n' Share. These incredibly delicious pecan butter honey chicken thighs. This delightful dinner is made in 30 minutes and your family and friends will love it.

Ingredients
  • 7 - 8 medium boneless skinless chicken thighs (You can use bone-in and skin-on too if you wish.)
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon unsalted butter (For frying)
  • 1 tablespoon olive oil (For frying)
  • 1/4 cup (4 tbsp) unsalted butter for sauce
  • 1/4 cup pecans, halved or lightly crushed
  • 1/2 cup chicken stock (You can use beef or vegetable stock as well.)
  • 1/4 cup packed brown sugar
  • 1/4 cup honey
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
Instructions
  1. Lay the chicken thighs on a plate and season both sides with salt, pepper, and garlic.

  2. Add the 1 tbsp of butter to a pan over medium high heat and allow it to melt down. Pour the olive oil in to prevent it from burning.

  3. Place the thighs in the pan making sure they are evenly distributed and fry them on both side until cooked though and the juices run clean. This should take about 4 minutes on each side. Set them aside on a plate.

  4. In the same pan, add in the 4 tbsp of butter and allow it to melt down.

  5. Put the pecans in, stir, and allow them to roast in the butter for a few minutes.

  6. Pour the stock in followed by the sugar, honey, thyme, and parsley. Whisk until well combined. Bring to a simmer.

  7. Add the chicken back in, spoon sauce over it, and allow it to simmer in the sauce for about 5 minutes turning occasionally. 

  8. Serve over rice or mashed and enjoy your pecan butter honey chicken thighs.

Note

As I mentioned earlier, I use boneless skinless thighs as the are so easy to work with and healthy. You can also use other cuts if you wish.

Adjust the seasoning according to you taste. Other seasoning can be added as well.

Use a good honey as it will make all the difference in the world. Same with the pecans. You can also adjust the amounts according to your liking and diet.
