  1. Place the chicken thighs into a bowl and season with salt, pepper, paprika, garlic, Italian seasoning, and 3/4 if the ranch powder. Mix until the chicken is completely covered. 

  2. Add the chicken broth and butter to a pan and bring to a boil. Then, add in the dressing. Turn off the heat and stir. Place a lid on and set it aside. I use the chicken mix and not the turkey. 

  3. Add the oil to a baking dish and brush it around. Place in the potatoes evenly into the baking dish followed by the carrots and season with the remaining salt, pepper, garlic, Italian seasoning, remaining ranch mix, melted butter, and the sour cream. Using a spatula, mix until well incorporated. 

  4. Spread the stuffing evenly over the vegetables and place the chicken over the top. Make sure it is skin side up. Place in a 400 degree F. preheated oven for 50 minutes or until the veggies and chicken are done. Garnish with parsley or the green of your choice.
