Savory Chicken Drumstick Adobo

I lived in the Philippines for two years. You can't live among the Filipinos and not have adobo. That is simply unheard of and insulting to the nationals . After tasting adobo, there was no turning back. The taste is intoxicating and addictive to say the least. Adobo is a recipe that is created to sit without refrigeration for a rather lengthy period of time. That accounts for the vinegar and other ingredients in the dish. At the onset, one would think these ingredients are rather odd, but the outcome is a blend of flavours that is incredible. The great thing is adobo can be made with chicken or pork. I suppose one could even try it with lamb; although, I have not known many that have.

Description

Chicken adobo is made with a fantastic combination of chicken, garlic, ginger, onions, and and incredible combination of spices.

Ingredients
  • 8 drumsticks
  • 5 cloves of chopped garlic
  • 1 thumb size ginger, chopped
  • 1 small chopped onion
  • 1/4 cup soy sauce
  • 2 tablespoons white vinegar
  • 1 1/2 cup water
  • 1 teaspoon sugar
  • pepper to taste
  • 2 bay leaves
  • 1 spring onion for garnish
Instructions
  1. Add some oil to a pan, place the chicken in, and fry it until brown.

  2. Put the garlic, ginger, and onion in and fry until fragrant.

  3. Pour in the soy sauce, vinegar, and water. Follow this by the sugar, bay leave, and pepper. Bring it to a boil.

  4. Reduce the heat and allow it to simmer for about 20 minutes. Turn the chicken every now and then.

  5. Serve over steaming hot rice, garnish with the green onions and enjoy your chicken adobo.
