Caramel chicken is an easy recipe that can be made quickly. In light of that, it makes a great midweek meal. I often serve it up as my Wednesday special; although, it can be served any day of the week. The sauce is simply delightful served up over a bed of steaming hot rice.

Add the brown sugar and water to a pan over medium high heat. Stir for a minute or so until it thickens and begins to caramelize.
Add the chicken in and stir until coated with the sugar.
Add in the garlic, fish sauce, and pepper. Stir and fry until the chicken is no longer pink.
Add the chicken stock in, lower the heat, and allow it to simmer, flipping occasionally, for about 25 minutes.
Serve over a bed of steaming hot rice. Garnish with the green onions and enjoy your sweet braised chicken in 30 minutes.
