Add the ground beef to a pan over medium high heat. Break up, stir, and fry until browned through. Move everything to one side of the pan. Add in the onion, garlic, and bell pepper. Stir and fry until the onion and garlic are fragrant and the bell pepper begins to soften. Mix everything together.
2 Add in the BBQ sauce, ketchup, Worcestershire sauce, brown sugar, yellow mustard, paprika, Italian seasoning, hot sauce, salt, and pepper. Stir until well combined. Add in the beef broth and noodles. Stir and bring to a boil. Reduce the heat and simmer for about 12 minutes until the noodles are tender. If it looks too dry while simmering, add in a bit more beef broth or water. Pour in the heavy cream and stir once again. Now add in about half the cheese and stir until combined. Cook for an additional two minutes or so. Turn off the heat and add the remaining cheese over the top.
3 Garnish with the parsley, serve, and enjoy your Smoky Mountain Mac and Cheese!

Add real smoke: For even more smoky depth, stir in a small amount of liquid smoke (start with 1/4 tsp) or use smoked gouda or smoked cheddar alongside your regular cheese.
Bacon bonus: Crumbled cooked bacon adds richness and crunch — fold it into the mac or sprinkle on top before baking.
Spice it up: Add a pinch of cayenne or chopped jalapeños if you want a smoky kick with some heat.
