SO EASY! Sweet Spicy Baked Chicken at Home

Description

I love chicken recipes, but they have to be quick, easy, and delicious. After coming home on a Wednesday night, that's just what I wanted. 

I had the hankering for something sweet and spicy, however. So, I went to work and grabbed some seasoning and a few other ingredients from my pantry. The little effort was well worth the outcome.[wpinsertshortcodead id="pgypi60b189d6e468e"]

Ingredients
  • 2 - 3 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 2 tablespoons sriracha
  • 2 tablespoons brown sugar
  • 1 teaspoon dried or 1 sprig of fresh thyme
  • 1 teaspoon onion powder
  • 2 tablespoons corn starch
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 4 cloves garlic, grated (You can use pressed, minced, or powdered as well.)
  • 1 medium thumb size ginger, grated (For substitutions see garlic above.)
  • 1 - 1 1/2 pound boneless skinless chicken thighs ((3/4 kilo) You can use skin and bone in as well. Adjust cooking time accrodingly.)
Instructions
  1. Add the chicken and all of the ingredients to a mixing bowl. Mix until the chicken is coated and the seasoning is well combined.

    I bake them immediately, but you can allow them to marinate for a few hours or even overnight for better results.
  2. Lay the thighs out evenly on a baking sheet lined with aluminum foil or parchment paper. Make sure there is some space between each piece of chicken.

  3. Place in a 425 degree F or 220 C and bake for 25 to 30 minutes. If you want them really browned, broil for an additional 5 or 10 minutes. 

  4. Plate and garnish with chopped green onions, parsley, or cilantro.

Note

As I always say, adjust the seasoning according to your liking. 

I use boneless skinless thighs, but you can use skin on and bone in if you wish. Just remember that they take longer to cook, so adjust cooking time accordingly.
