Believe it or not, these rolls are a simple combination of spices mashed in potatoes and then presented in an egg roll wrapper. The very concept is laughable, but when I tried these the last laugh was on me. A must try.

Boil the potatoes until they are fork tender. This should take about 15 minutes. Place them into a bowl and mash until well combined.
Add in the butter, curry, garlic, salt, and pepper. Mix them in using a spatula or spoon until well combined.
Place the egg roll wrapper on a flat surface so it looks like a diamond. Spread some water around the outside edges to seal them. Place some the mashed mixture onto the middle leaving a bit of bare wrapper on the ends. Fold each end of the diamond (end) toward the middle and roll them up. Set them aside on a plate.
Place the oil into a wok and heat it to 350 degrees F or 180 C. Place the rolls in, in batches, and fry for 3 to 4 minutes until they're golden brown. Flip them half way through of course.
Set them aside on a wire rack. Serve with your favourite sauce and enjoy your spiced mashed potato egg rolls.
