Squash and Onion Omlette

squashonionomelette
As Hallowe'en and Thanksgiving are approaching, we always have left over pumpkin. We often wonder what to do with it. You can, of course, make pies, but I decided to go an extra step and and be different. So, I made a squash style pumpkin omelette. Believe me, it was well worth the time and effort. It is a type of omelette I have never tasted before. The taste of fresh pumpkin just comes through so nicely you will want to have seconds and share it with your family and friends.
