There is nothing better than a nice omelette for breakfast. I'll let you in on a secret, however, it's great for any time of the day. As silly as it might seem, I have been know to have one for dinner and this is the perfect omelette. Give it a try and your family and friends will love it.

Crack the eggs into a bowl followed by the milk, garlic powder, salt, and pepper. Whisk until well combined.
Add in the pumpkin and onions. Once again, mix until well incorporated.
Add some oil to a pan over medium high heat and pour the omelette mixture in and spread it out. Slip a lid on and cook until it's set on one side.
After 5 or 6 minutes and it's set on one side, remove the lid and place a plate over top of the omelette. Gently flip it onto the plate, turn it over, and flip it back into the pan. Fry for an additional 3. minutes or so on the other side.
Serve and enjoy your squash and onion omelette.

The great thing is you can make the pumpkin omelette in about 20 minutes and it involves minimal effort and ingredients. Just add some eggs, pumpkin, green onions, milk, salt, pepper, and garlic and you have one of the nicest omelettes you have ever had. Most of the ingredients you will have in your pantry or fridge. Of course you can add extras if you wish.
