Packed with juicy sausage, tender vegetables, and rustic spices, it’s a hearty one-pan meal that captures the warmth and color of a late summer evening. Add some oil to a pan over medium high heat. Place the sausage in and fry until cooked through. Place it into a bowl and set aside.

In the same pan, add in more oil. Put the onion and bell pepper in. Stir and sauté for about 2 minutes. Add in the zucchini, tomatoes, and corn. Continue to stir and fry for a few minutes. Push everything to one side and add the butter and garlic in. Stir and fry. Season with the paprika, Italian seasoning, chili powder, salt, pepper, lime zest, and juice. Stir until well combined. Simmer for 4 or 5 minutes. Add the sausage back in and stir once again.

Garnish with parsley. Plate, serve, and enjoy your Summer's Last Stand.
