Super Long Thin French Fries

I remember heading down the streets in Toronto and smelling the fries from local eateries. There was one place in particular that served super long thin fries. I just loved them. The smell, taste, and texture has never left my memory. Later in life, I decided to reproduce them and they came out exactly as I remember. Of course, one thing I did change was the spices on the fries. As with anything prepared for the public, they were rather bland.

Description

Our thin French fries are so easy to make and incredibly delicious. We make them with homemade potatoes and a combination of spices, cornstarch. Be sure to serve them up with your favourite sauce. You will especially love them with burgers or hot dogs. Believe me, you family and friends will rant and rave over them.

Ingredients
  • 2 medium potatoes peeled and boiled (Any kind of potato can be used.)
  • 2 tablespoons unsalted butter
  • 3 tablespoons Milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon granulated garlic
  • 1/4 cup corn starch
  • oil for frying
Instructions
  1. Add the potatoes to a bowl followed by the butter, salt, pepper, garlic, and parmesan cheese. Mash until smooth and creamy. 

  2. Gradually add in the corn starch and continue mashing. 

    If it seems too dry, add in a bit more milk.
  3. Add the mashed potatoes to a piping bag and cut the tip. Pipe the long fries onto a plate. You want them about 6 or even 8 inches long. 

    A zip lock bag can be used as well. You can pipe them directly into the oil if you like. I just like to see the size and length first.
  4. Place the fries into hot oil and fry, in batches, until they are a nice golden brown. You only need to fry for about 2 minutes because they are quite thin.

    You want your oil about 350 degrees F. You can always tell if it's hot enough if you drop a bit of potato in and it fizzes.
  5. Set the fries aside on a wire rack to drain any excess oil. 

  6. Serve with your favourite sauce and enjoy your super long thin fries.
