I love chicken thighs. In my opinion, they are the best part of the bird. One Tuesday after work, I grabbed up some thighs and a few ingredients. Put them together and this absolutely delicious sweet hot mustard chicken thigh recipe was born. Believe me, the taste was a flavour explosion. As one member said: "This recipe has a flavour that will never leave your taste buds."

Lay the chicken breasts out and make two diagonal slices (about 1 1/2 inches apart) down each thigh.
Add all of the ingredients to a mixing bowl and whisk until well combined.
Place the chicken into a large zip lock bag. Pour the marinate over the top. Seal the bag and message it into the meat. Place it in the fridge for about two hours or over overnight. I often use mine right away though.
Place the thighs on a baking sheet lined with parchment paper. Brush any additional marinate over the top.
Place in a 450 degree F or 230 C preheated oven for about 30 minutes depending on the size of your thighs.
Serve with your favourite veggies, rice, or mashed and enjoy your sweet hot mustard chicken thighs.

I strongly suggest keeping the ingredients as is in this recipe. The taste is incredible. You can alter the amounts a little. For example, if you want more heat, use a bit more cayenne pepper.
The use of thighs is essential as they are so juicy. I find breasts dry out too fast.
