I'm always on a quest for the simplest and most delicious midweek meal I can find. As a matter of fact, I get annoyed if I can't make it in under 30 minutes. Well, this Greek chicken recipe certainly checked all of the boxes.

Add the oil to a pan over medium high heat. Place the chicken in and season with salt, pepper, thyme, and rosemary. Stir and fry until browned and cooked through. This should take about 5 or 6 minutes.
Add in the garlic and stir and saute for about 2 minutes until the garlic is fragrant.
Place in the olives, artichokes, and sun-dried tomatoes. Stir and fry for 3 to 5 minutes.
Serve over the rice and garnish with parsley.

If you can't find artichokes, which really make the dish, you can use asparagus or brussel sprouts. I do strongly suggest you get the brussel sprouts, however. Most grocery stores carry them.
You can also boneless skinless thighs in place of the breasts for a bit more flavour.
Roasted bell peppers also go nicely with the dish.
