Add the pasta to some boiling salted water and cook for 10 minutes until al dente. Drain and set aside. I usually add a bit of olive oil in to stop it from sticking.Â
Add half the oil to a pan over medium high heat. Place the chicken in and fry until cooked through. Set it aside. Add in the butter and allow it to melt followed by the rest of the oil. Put the mushrooms in. Stir and fry until they release water and begin to change color. Push the mushrooms to one side of the pan and add in the onion and garlic. Stir and saute for about 2 minutes until fragrant. Add in the bell peppers. Stir and fry until fork tender.Â
Add the chicken back in. Season with salt, pepper, Italian seasoning, paprika, and hot pepper flakes. Stir until well combined. Pour in the chicken broth and the cream. Mix until combined and bring it to a boil. Add the pasta in and stir once again. While mixing add in the parmesan and continue to stir. Allow to simmer for a few minutes until it becomes thicker and creamy.Â
