  1. Add the butter, brown sugar, and flour to a mixing bowl. Mix until well combined and a crumble forms. Add in the cinnamon and continue to mix. Set aside in the fridge.Β

  1. Add the flour, baking powder, baking soda, and salt to a bowl. Mix until well combined. Set it aside.Β

  2. In the bowl of a stand mixer or seperate bowl, add in the butter and sugar. Mix until combined and smooth. Add in the eggs and mix once again. Pour in the vanilla and add in the sour cream. Mix until combined. Don't worry if it's lumpy as it should be on the lumpy side. Add in the dry ingredients and mix slowly. Pour in the milk and continue to mix slowly until fairly smooth and combined.Β

  3. Add half the cake mixture to a 9 by 9 baking dish or the dish or your choice. Smooth it out. Add half the crumble evenly over the top. Be sure not to mix the crumble with the cake as it should be layered. Add the second half of the cake mix over the crumble and carfully smooth it out. Add the remaining crumble over to finish the cake off.Β

  4. Place the cake in a 375 degree preheated oven for 35 - 40 minutes or until an inserted toothpick comes out clean.Β

Bake at 375 if you are using glass or 350 for other baking containers.
  5. Remove. Allow to cool for a few minutes, slice, and serve. Enjoy your LAZY BAKER'S Coffee Cake!

Note

Store leftover coffee cake in an airtight container at room temperature for up to 3 days. Alternatively, you can freeze the cooled cake for up to 2 months. Thaw overnight in the refrigerator before serving.

Gently reheat slices of coffee cake in the microwave for a few seconds until warmed through. You can also reheat the entire cake in a preheated oven at 350Β°F (175Β°C) for 10-15 minutes.

Enjoy your coffee cake warm with a cup of coffee or tea. For an extra decadent treat, top it with whipped cream, vanilla ice cream, or a drizzle of caramel sauce.

Don't have sour cream? Substitute plain yogurt mixed with a teaspoon of lemon juice. No buttermilk? Combine 1 cup milk with 1 tablespoon of vinegar or lemon juice and let it sit for 5 minutes before using.

Get creative! Add a cup of chopped nuts, chocolate chips, or dried fruit to the batter for a delightful twist. Drizzle the top with a streusel topping before baking for added texture.
