This Homesteader’s Chicken Thigh Casserole is the kind of meal that brings comfort to the table with every bite.   1. Season the chicken, on both sides, with salt, pepper, paprika, Italian seasoning, and Southern seasoning. Place the oil into a pan over medium hight heat. Put the chicken in, skin side down first, and sear on both sides. This should only take about 2 or 3 minutes on each side. Set the chicken aside.  

  2. Add the cream of mushroom soup, milk, chicken broth, mixed veggies, onion, rice, onon powder, Italian seasoning, and pepper to a mixing bowl. Stir until well combined. 

  3. Spay a casserole dish with some spray. Pour the mixture in, stir, and place the chicken in. Wrap the dish with aluminum foil and place into a 375 degree F or 200 C preheated oven for 45 minutes. 

  4. Remove the foil and sprinkle the cheese over the top. Place the dish back into the oven, uncovered, for a few minutes to allow the cheese to melt.
