Description

This Cheesy Cornbread Chili Bake combines a hearty beef-and-bean chili base with a fluffy, cheesy cornbread topping. Baked until golden and bubbling, it’s a one-pan meal that’s rich, comforting, and easy to make with simple ingredients. Perfect for feeding a crowd or cozying up on a weeknight, this dish is a flavorful twist on classic chili and cornbread — all in one bite.

Instructions

  1. Add the ground beef to a pan over medium high heat. Stir and fry until cooked through and browned. Push the ground beef to one side and add in the onion and garlic. Stir and sauté until fragrant. Mix together. 

  2. Add in the tomato paste and stir until the beef is coated. Season with chili powder, cumin, smoked paprika, salt, and pepper. Mix and fry until the seasoning activates. Add in the tomatoes, red beans, and black eyed beans. Mix once again. Allow to simmer for 7 to 10 minutes. 

  3. Add half the cheese into the chili mixture and stir. Place the jiffy mix over the chili. You can do it in one large pancake or individual scoops. 

    I'm using a cast iron pan, so it can go directly into the oven. If not you will need to grease a baking dish and transfer the chili into there.
  4. Place into a 375 degree F preheated oven for 25 minutes until the cornbread is baked. After about 20 minutes, pull the dish out of the oven and add the remainder of the cheese over the top. Place back in the oven for about 5 minutes to allow the cheese to melt.

    You could also add some sour cream over the top.

To Make the Cornbread

  1. Add the jiffy mix, egg, milk, and creamed corn to a bowl. Whisk until well combined. Do not overmix. If it look too soupy, you can add in a bit of flour.

Customize the Heat: Add diced jalapeños, hot sauce, or extra chili powder if you like a spicier chili. Want it milder? Omit the chili powder and use mild beans.

Use What You Have: Ground turkey, sausage, or even lentils can be swapped for ground beef if you’re switching it up or going lighter.

Cornbread Tips: Jiffy Corn Muffin Mix works great, but you can also use your favorite homemade cornbread recipe. Add creamed corn or shredded cheese to make it extra moist and flavorful.

Cheese Options: Sharp cheddar adds bold flavor, but Monterey Jack, pepper jack, or a Tex-Mex blend also work beautifully.

Make It Ahead: You can prepare the chili layer ahead of time and store it in the fridge. Just add the cornbread batter right before baking.

Serving Suggestions: Garnish with green onions, sour cream, or avocado slices for a fresh finish. It also pairs well with a side salad or coleslaw.
