My Tío Jorge’s Mexican chicken was the best I have ever tasted. I can still remember it to this day. He patiently and methodically made it with cubed boneless, skinless chicken breasts, and his homemade taco seasoning. It’s really hard to believe this dish is made using only four ingredients. But I guess the simple things are sometimes the best. The thing I like the most is the seasoning is made from scratch with spices most of us have in our pantries. In this day and age, it’s nice to know what’s going into your food. I have to admit that sometimes I still cheat when I’m in a hurry and use the packaged stuff. I’m sure that Tío Jorge would not agree.

Tío Jorge's Mexican chicken is a simple and delicious recipe. I make it during the week because it only involves four ingredients and is made in under half an hour. You can make the taco seasoning from scratch or buy it in the store.

Place the chicken in a bag along with the taco seasoning. You can buy the seasoning to save time or make it from scratch. I have a great recipe for this.

Seal the bag and shake it until the chicken is completely covered with the seasoning. Then message the chicken in the bag to ensure the seasoning get into the meat.

Add some oil to a pan over medium high heat. Place the chicken in and fry it, while stirring, until the chicken is cooked through. This should take 5 or 6 minutes.

Put the chicken into a bowl or container, squeeze some lime over it, and garnish with the cilantro.

Serve as is or over steamed rice. Enjoy your 4 ingredient Mexican chicken.
