Tomato Egg Drop Soup

Our tomato egg drop soup is the ultimate comfort food. It's fantastic in the winter time, but you can make and enjoy it any time of the year. I find it's absolutely lovely with a homemade bun or a piece of homemade bread. It goes really nicely with sandwiches too. Of course you can alter the ingredients according to your liking. For example add some noodles, garlic, etc. It makes a great lunch with, as I said, a sandwich. Oh, I forgot to mention how nicely it goes with grilled cheese which we have many recipes for.   Without the word of a lie, your family and friends will go crazy over it.

I don't know of anybody who doesn't like a good comfort soup, especially soup. I'm not a fan or boring soup, however. To me, tomato egg drop soup is the perfect comfort food. It is absolutely wonderful served up on a winter day or a cool rainy day.

Ingredients
  • oil
  • 2 medium chopped tomatoes
  • 1 teaspoon minced ginger
  • 2 tablespoons soy sauce
  • 4 drops sesame oil
  • 4 cups chicken stock
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons corn starch diluted in 3 tbsp of water
  • 2 Beaten eggs
  • 1 medium green onion, chopped
Instructions
  1. Add some oil to a pan over medium hight heat. Add the tomatoes in, stir, and cook until they are soft and bright red.

  2. Put the ginger, soy sauce, sesame oil, and chicken stock in. Season with black pepper. Stir and bring to a boil.

  3. Pour in the diluted corn starch and stir until the sauce thickens. 

  4. Now add in the eggs and stir in a circular motion. Turn the heat off while continuing to stir. 

  5. Ladle into a bowl. Serve and enjoy your tomato egg drop soup.

Note

There is nothing better on a cool day than a bowl of soup. Tomato egg drop soup is one of my all time favourites. It is Asian in origin, but certainly suits American and European cultures just fine. I like my soup served up with some homemade bread or buns.
