Get ready to enjoy a breakfast that’s both effortless and full of flavor with our Trainwreck Breakfast! This one-pan skillet dish combines savory sausage, crispy bacon, tender eggs, and vibrant bell peppers, all brought together with just the right amount of seasoning. It's the perfect solution for a quick, no-fuss morning meal that doesn’t compromise on taste.

Ingredients
  • 5 Stips of bacon (Use the bacon of your choice.)
  • 6 Breakfast sausages, cut into bite size chunks
  • 3/4 Cups of frozen hash browns (The frozen hash browns are much easier and work fine.)
  • 1/2 Onion, chopped
  • 3 Cloves garlic, chopped
  • 1 Small red bell pepper, chopped
  • 1 Tsp Salt
  • 1 Tsp Ground black pepper
  • 2 Tsp Italian seasoning
  • 4 Eggs
  • 1 Tbsp of parsley, chopped
  • 2 Green onion, Chopped
  • 1 Cup of old cheddar cheese, shredded
  • 1/2 Cup of extra old cheddar cheese, shredded
Instructions
  1. Add the bacon to a pan and fry until crisp. Remove and set aside. Remove any excess bacon greese. Place the sausage in the same pan and fry until cooked through. Set aside. 

  2. Put the hash browns in and fry for a few minutes until they begin to brown. While they are frying, chop the sausage and bacon into bite size chunks. Once cooked, push the hash browns to one side. Add in the onion, garlic, and bell peppers, Fry until fragrant. Season with salt, pepper, and Italian seasoning. Put the sausage and bacon back in. Mix until well combined. 

  3. Spread the mixture out evenly. Make four wells in the mixture and crack the eggs into each well. Spread the cheeses over the top. Place in a preheated oven for 7 to 10 minutes until the eggs cook. Season the eggs with pepper and garnish with the green onions and parsley. Serve and enjoy your Trainwreck One Pan Skillet!
