The ultimate juicy roasted chicken recipe yields one of the most delicious chicken dinners I have ever had. The secret is the cavity stuffing. I begin by seasoning the bird with salt and pepper. Then, I stuff the cavity with fresh lemon, thyme, lemon grass, onion, and garlic. A generous application of melted butter is applied to the top followed by more salt and pepper. Next, I bake the chicken at 390 degrees F or 190 degrees C for 90 minutes. The outcome is out of this world. I just have to mention that when I was growing up roasted chicken dinners were always my favourite dinners. It still is today. The only problem was the bird was a little on the bland side and dry. Later in life, I developed this recipe which, in my opinion, is the perfect roasted chicken. As always, give it a try and let us know what you think.

This ultimate chicken dinner's secret is the stuffed cavity. Imagine the taste of a juicy roasted chicken stuffed with lemon, onions, garlic, and lemon grass. Then the bird is coated with salt, pepper, and melted butter and roasted to perfection. This outcome is to die for.

Ingredients
    For the Roasted Chicken
  • 1 medium whole chicken about 1.2 kg
  • 1/2 medium onion, quartered
  • 3 cloves garlic
  • 1 medium stalks of lemon grass, bruised
  • 1/2 medium lemon, quartered
  • 2 teaspoons salt, divided
  • 2 teaspoons ground black pepper, divided
  • 2 tablespoons melted unsalted butter
  • 2 medium sprigs of thyme
  • For the Potatoes and Carrots
  • 2 large Potatoes, cut into large cubes
  • 2 large carrots, sliced into 3/4 inch sections
Instructions
  1. Season the cavity of the chicken with half the salt and pepper. Add in the lemon, thyme, garlic, onion, and lemon grass.

    To bruise the lemon grass, I use a meat tenderizer. You can also use the blunt end of a knife. I also fold it into 3 sections to fit into the bird.
  2. Place on a wire rack. Brush the melted butter over the chicken and season with the remaining salt and pepper.

  3. Place in a 390 degree F 190 C preheated oven for 90 minutes.

  4. Slice, serve, and enjoy your ultimate roasted chicken recipe.

  5. For the Potatoes and Carrots
  6. Add the potatoes and carrots to the bottom of the baking rack. Drizzle some olive oil over the top and season with salt and pepper. Place into the bottom of a baking tray and cover with a wire rack.

  7. Place the top rack over the vegetables for the chicken.

Note

This is the perfect size bird to feed 4. You can, however, use a bigger bird and the same recipe if you wish.

If you have trouble finding the lemon grass, you can leave it out. It does, however, add a tremendous amount of flavour to the chicken.

You can also vary the amount of the rest of the ingredients according to your liking.
