Heat a cast iron skillet over medium heat and add the ground beef. Cook until browned, breaking it up as it cooks.

Add the diced onion and garlic. Continue cooking until the onion softens and becomes translucent. Mix until combined. Season with salt and pepper. Stir in the Worcestershire sauce, liquid smoke, and paprika. Stir and cook for another minute to combine the flavors.

Reduce the heat to low and add the mayo, sour cream, ketchup, mustard, and pickle juice. Stir until everything is well combined and the mixture becomes thick and creamy.

Fold in the diced pickles, crumbled bacon, and half of the red onion. Mix once again.

Add the mozzarella and cheddar cheese to the skillet and stir until evenly mixed.

Smooth the mixture out in the pan, then top with the remaining cheddar and a small amount of mozzarella. Do not press the cheese down.

In a small bowl, make the sauce by combining the mayo, ketchup, mustard, pickle juice, garlic powder, onion powder, and water. Mix until smooth and set aside. I transfer mine to a squeeze bottle so I can drizzle it over the top, but a spoon works fine as well.
