Ingredients
  • 2 tablespoons olive oil for frying
  • 2 cups broccoli
  • 1/2 medium red bell pepper, chopped
  • 1/2 medium can of sweet corn
  • 1/2 small chopped onion
  • 3 cloves garlic, chopped
  • 1 medium package of pre-cooked chicken, chopped (You can use leftover chicken as well.)
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon hot pepper flakes
  • 1 cup salsa
  • 1 cup grated cheddar cheese
  • 1 medium package of pre-cooked brown rice
Instructions
  1. Pour the oil into a pan over medium high heat. Add in the broccoli, red bell pepper, and corn. Fry for 4 or 5 minutes until the veggies are fork tender. 

  2. Add in the onion and garlic and saute until fragrant. Put the chicken in and season with salt, pepper, and hot pepper flakes. 

  3. Serve over rice and top with salsa and cheese. Enjoy your 15 minute chicken veggies and corn.
