Description

Omelet bites are a simple combination of eggs, tomatoes, onions, and other spices. They only take about half an hour to make and are great for an on-the-run meal. I often make them up the night before, place them in the fridge, a grab on the next morning.

Ingredients
  • 6 large eggs
  • 1/4 cup milk
  • 1 small chopped tomato
  • 2 medium stocks of green onions, chopped
  • 1 teaspoon minced garlic
  • 3 slices bacon finely chopped (I always have my bacon crisp.)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup grated cheddar cheese (I like the old sharp but use the cheese of your choice.)
Instructions
  1. Add the eggs to a mixing bowl followed by the milk, tomato, green onions, garlic, bacon, salt, pepper, and cheese. Mix until well combined.

  2. Spray the inside of a muffin tray. A six muffin tray should suffice. Fill it about 3/4 full with the mixture.

  3. Place the mixture into a 350 degree F or 180 C preheated oven for about 20 to 25 minutes.

  4. Allow them to cool completely. Serve with your  favourite sauce and enjoy your omelet bites.
