Cheesesteak Stuffed Peppers in 30 Minutes

I remember when I was young I was forced to eat stuffed pepper. I hated that. Worse yet, I was always made to eat them raw. Later in life I began to enjoy that. I remember the day, however, that my mom added a steak mixture and some cheese to some bell peppers she had pre-baked. My goodness, I thought I had died and gone to heaven. The taste and texture was simply out of this world. I perfected her cheesesteak stuffed bell peppers and still eat them today. It's a must on my menu at least once a month.

Description

Our cheesesteak bell peppers is a delicious combination of of red peppers, onions, mushrooms, and much more. It is nutritional, delicious, and the outcome is simply stunning.

Ingredients
  • 1 pound sirloin steak, sliced thinly
  • 4 medium red bell peppers, seeds removed cut in half (Leave the stem in tack for appearance.)
  • 1 large onion, sliced
  • 16 ounces sliced button mushrooms
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon Italian seasoning
  • 8 slices mozzarella cheese, cut in half
  • 1 tablespoon fresh parsley for garnish
Instructions
  1. Place the bell peppers into a baking dish. Place into the oven and bake them at 325 degrees F or 165 C for about 30 minutes or until tender.

  2. While the peppers are baking, add some oil to a pan over medium heat. Add in the onions, button mushrooms, season with salt and pepper. 

  3. Stir and fry for about 6 minutes until the onions are translucent and release most of the water. 

  4. Place the steak and Italian seasoning in. Fry until the meat is browned and cooked through. This should take about 3 or 4 minutes.

  5. Remove the bell peppers from the oven and add a slice of mozzarella inside. Fill with the meat mixture and top with another slice of cheese.

  6. Place back into the oven on broil for an additional 3 minutes until the cheese is melted.

  7. Garnish with parsley. Serve and enjoy your cheesesteak stuffed pepper.

Note

I use red bell peppers in this recipe because I like the sweetness. You can use green or yellow peppers though. Of course, the ingredients you can alter to your liking. The main thing is to use a good cut of meat. That will make all the difference in the world.
