  • 6 medium chicken thighs, bone removed and skin on sliced into bite size chunks (You can also use boneless, skinless if you wish.)
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 4 tablespoons honey
  • 2 teaspoons ground black pepper
  • 1/2 teaspoon hot pepper flakes (optional)
  • 2 tablespoons corn starch
  • 4 large scallions (green onions), chopped (Use both the greens and the whites.)
  • 2 tablespoons oil for frying (I use olive oil.)
  1. Add the chicken, soy sauce, oyster sauce, honey, pepper, and corn starch to a mixing bowl. Mix until the chicken is well coated with all the ingredients. Set aside. 

  2. Add the oil to a pan over medium high heat. Place the chicken in and stir and fry until cooked though. Add in the scallions, reserving a few for garnish. Cook and stir for an additional 2 or 3 minutes. 

  3. Plate and garnish with the additional scallions. 

  4. Serve and enjoy your scallion chicken.
