Perfect Pizza Frittata in 30 minutes

Pizza frittata is one of my all time favourite breakfasts. Made with a combination of onions, garlic, red bell peppers, spinach, mushrooms and more, the omelette is out of this world. Combine this frittata with pizza sauce, pepperoni, and cheese, it is simply to die for. If you are having trouble getting the kids to eat breakfast, this is your answer. I make this up about twice a month. Believe me, it is a hit every time.

When it comes to a simple and delicious breakfast, there is nothing better than a breakfast frittata. I always make this up at least once every two weeks. Believe me, the entire family will love it.

Ingredients
    Ingredients for the Frittata
  • 6 eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup milk
  • 1 tablespoon fresh basil (If you don't have fresh basil, you can use dried.)
  • 1 tablespoon oil for frying
  • 1 small chopped onion
  • 2 Drizzle chopped garlic
  • 2 button mushrooms, sliced
  • 2 tablespoons red bell peppers, chopped
  • 2 cups baby spinach
  • 2 tablespoons pizza sauce
  • 12 slices pepperoni
  • 1/2 cup mozarella cheese
Instructions
    How to Make the Frittata
  1. Add the eggs to a mixing bowl followed by the salt, pepper, milk, and basil. Whisk in until well combined.

  2. Add the oil to a cast-iron skillet over medium high heat. Place in the onions, garlic, but mushrooms, bell and peppers. Stir and saute until the onions become translucent and the garlic becomes fragrant. 

  3. Add in the baby spinach and cook for an additional two or three minutes to the point where are the spinach begins to wilt.

  4. Add in the egg mixture and cook until it begins to set around the edges. Then, add in the pizza sauce and pepperoni. Top with mozzarella cheese.

  5. Place the skillet into a 425°F, 200°C, preheated oven for 5 to 6 minutes until it sets.

  6. Serving enjoy your perfect pizza frittata.

Note

As with any recipe, you can change some of the ingredients to your taste. For example, ham instead of pepperoni could be used or even chicken. You could add more or less onions and garlic. The types of mushrooms you use can vary. The list is really endless.
