Bulgogi (불고기) is a staple food of Korea. The word means “fire meat.” According to Wikipedia, it is considered one of the worlds top 50 most delicious foods. It is finely sliced beef marinated in a combination of spices and vegetables. Actually, it is a really simple dish to make. I often serve this up midweek along with some steamed rice. It is also great with mashed potatoes.
There are a few cooking tips to making bulgogi: When making it, the beef has to be sliced super fine. I usually go to my local butcher and tell him what I’m making and always get the right cut. Depending on where you are located, some supermarkets carry finely cut beef. A sirloin or other prime cuts are best. Before I make it, I slice the beef into smaller bit size pieces. The vegetables should be sliced fairly fine. A julienne slice is the best. In Korea, it is sometimes spicy, so you can add in some chili paste or peppers. I don’t like it spicy, however. If you want it a little sweeter, you can add a little more honey or sugar. The sweetness is the nicest part of bulgogi, at least in my opinion. Cooking it over medium high heat for about 5 minutes will give a medium cook to the beef, and you will have some sauce to spoon over the rice. If you want it a little more well done and drier, increase the time by a minute or two.
