Blueberry pancakes are an easy and tasty breakfast. If blueberries are in season, which is usually during the summer months, they are perfect. There are over 30 different types. We use Brigitta berries simply because of our location, but you can choose the best berries to suit your taste. We find that this recipe is superb made with fresh blueberries. You can use frozen berries. Be sure they are defrosted and patted dry, however, as they will bleed into the pancake mixture.
When dropping the berries into the pancake mixture, hold them 4 to 6 inches above the batter. I call this the drop and plop method. It gives enough impact for the berry to penetrate the mixture. Make sure your heat is medium. If it’s too high, it will burn the outer surface of the pancake without thoroughly cooking the center.
I enjoy serving my blueberry pancakes served up with a knob of butter and some Canadian maple syrup. You can use other syrups or corn syrup, however. Give these a try. We’re sure you will like them.

- If your using frozen blueberries, make sure they are defrosted ahead of time and patted dry.
- Add the flour, salt, baking powder, and sugar to a mixing bowl. Whisk until they are well combined.
- Add in the egg and the milk. Whisk until everything is well incorporated and a nice, thick batter forms.
- Coat a nonstick, preheated pan with baking spray or butter. You can also use a pancakes griddle, if you wish.
- Scoop up about 1 ladle full of the batter and pour it in the pan. Distribute the blueberries by dropping them into the pancake. Allow it to cook, over medium heat, until the top layer of the mixture begins to bubble and the bottom is lightly browned.
- Flip it to the other side. Allow it to cook for a minute or until the pancake is lightly browned on both sides.
- Serve your blueberry pancakes up with a slice of butter on the top and maple syrup poured over it. Enjoy!
