Pork with shrimp and shitake mushrooms is a simple and delicious recipe. It can be cooked in about 40 minutes. The root of the dish is Asian. You can use just about any cut of pork in the recipe – pork shoulder, pork belly, etc. Fresh shrimp is critical to a good outcome. I like to use medium size prawns. If you’re not a fan of shitake mushrooms, you can use button mushrooms. Shitake mushrooms a nice touch because they cook down a little slower and are a little firmer.

- 1/2 kilo Pork, cubed (any cut)
- 8-10 pcs medium size shrimp deveined
- 6 shitake mushrooms, sliced
- 3 cloves garlic, chopped
- 1 small onion, chopped
- 2 tbsp fish sauce
- 1 medium tomato, chopped
- pepper to taste
- 1/4 cup water
- cooking oil

- Add cooking oil to a preheated pan. Add in onions, garlic, and tomatoes. Saute until they are fragrant.
- Place the pork in and saute until it’s light brown.
- Add in the shrimp and stir together until the shrimp changes its color to pink.
- Pour some water in. Cover and simmer it over low heat for at least 30 minutes. If you’re using a large cut of pork, simmer it longer until tender.
- When the pork is tender, add the shitake mushrooms. Stir and allow it to cook for at least 3 minutes. Turn off the heat.
- Serve and enjoy!
