Chicken BLT sandwiches are simple and delicious. The poached chicken combined with the hickory BBQ sauce, bacon, vegetables, and ranch dressing creates a beautiful combination of flavors. I enjoy these served up for lunch on the weekends. These tasty chicken BLT sandwiches are something your family and friends will love.
You can use any type of BBQ sauce it this recipe, but I suggest Hunt’s Hickory. It seems to blend so nicely with the rest of the flavors in the sandwich. There are many ways of poaching the chicken, but we have done some experimenting and research and have come up with a really nice poached chicken recipe. The spices used in the poach also blend ever so nicely with the BBQ sauce. We use Romaine lettuce in this recipe. If you plan on using another type of leaf, Β I suggest you stick with leaves which have a very light flavor to them. You also want the onions sliced very thinly or they will will overpower the sandwich. Use a good quality ranch dressing because the cheaper ones have a fairly weird aftertaste to them. As always, make sure your tomatoes are perfectly ripened. You could use white bread, but brown bread is healthier and gives the chicken BLT a nicer appearance. Lastly, make sure a good quality bacon is used. This can make or break the BLT.

- 2 chicken breast, poached and streaded
- 1 large tomato, sliced
- 1/2 onion, sliced thinly
- 2 pieces of romaine lettuce, sliced in half
- 8 slices of bacon, fried crispy
- 2 tbsp of ranch dressing
- 4 tbsp of BBQ sauce (I suggest Hunt’s Hickory)
- 2 slices of cheese
- 6 slices of brown bread

- Shred the poached chicken into strips and set aside in a bowl. Then add the BBQ sauce. Use a spatula or spoon to mix it together. Set it aside.
- Fry the bacon until crispy. Set aside.
- Toast the bread so it’s nicely browned. Butter the bread. Add a generous layer of the chicken mixture on top of the bead followed by the cheese slice. Then, add the next piece of toast followed by the bacon, lettuce, tomato, and onions. Drizzle the ranch dressing over the top and add the last layer of bread.
- Slice it in half, sever, and enjoy your chicken BLT.
